Tasting Notes:
Elegant and full of tension with marine influence on the nose showcasing oyster shell, sea salt, lemon rind and cashew butter. The palate is lithe in texture, with a verve of succulent acidity to frame the flavors of honeycomb, nougat and pastry cream on a long, saline finish.
Winemaker Notes:
100% whole cluster pressed. Fermented in a combination of neutral French oak (82%) and new French oak (18%) using native yeast. Partial malolactic fermentation, Aged 11 months sur lie prior to bottling.
