Tasting Notes:
Complex nose of dried cherry, tobacco leaf, orange rind and bergamot. The palate has a play of dense richness paired with sappy acidity that brings out flavors of wild blueberry, cinnamon bark with an undercurrent of toasty oak and earth.
Winemaker Notes:
The winemaking is really straight forward: Destemmed, fermented in both 1 ¼ Ton bins with punch downs and tank Fermentations using pump-overs, no additions other than nutrient and cultured. Yeast, not fined, filtered to 1 micron. Aged in 20% New French and then tapered down to about 40% neutral. I really enjoy the northern Santa Barbara Co. Pinot Noir. It’s distinct, aromatic, and inviting.
