Tasting Notes:
Elegant and delicate aromas of baked strawberry pie, citrus blossom, white cherry and ginger biscuit. The palate is wrapped in tension, driven by chalky minerality interwoven with floral accents and marzipan that lead to a dry, mouthwatering finish.
Winemaker Notes:
Sourced from Eden Rift Vineyard in the Cienga Valley of the Central Coast. Comprised of 70% Pinot Noir (Clone 828) and 30% Chardonnay (Calera Clone). The base wine was individually whole cluster pressed, only using the heart of the pressings, settled for 24 hours prior to being barreled down to neutral French Oak barrels where they fermented slowly via native yeast over the course of 6 weeks. Post primary fermentation, the cuvee was assembled and aged an additional 6 months in barrel to integrate and harmonize prior to tirage bottling where the wine underwent secondary fermentation to capture further complexity and generate the fine bead of bubbles.
